Zucchini Noodles

Recipe: Zucchini Noodles with Pesto Sauce


  • 2 medium-sized zucchinis
  • 1 cup fresh basil leaves
  • 1/4 cup pine nuts
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic
  • 1/4 cup extra virgin olive oil
  • Salt and pepper to taste

1. Using a spiralizer or vegetable peeler, turn the zucchini into noodles. Set aside.

2. In a food processor, combine basil leaves, pine nuts, Parmesan cheese, garlic, salt, and pepper. Pulse until finely chopped.

3. While the food processor is running, slowly drizzle in the olive oil until the pesto is smooth and well combined. Adjust seasoning to taste.

4. In a large skillet, heat a tablespoon of olive oil over medium heat. Add the zucchini noodles and sauté for 2-3 minutes until tender but slightly crisp.

5. Once the noodles are cooked, add the pesto sauce to the skillet and toss until the noodles are evenly coated.

6. Serve hot, garnished with additional Parmesan cheese.
