Rick Stein

Born in 1947, Rick Stein is a highly acclaimed British chef who also bears the titles of restauranteur, cookbook author to over 25 books, and television presenter to over 30 programmes. He gained fame for his passion for seafood and traditional British cuisine. Starting with a small restaurant in Padstow, Cornwall, he expanded his empire to multiple eateries and cookery schools. In 2018, Mr. Stein was awarded for his contributions to the economy by the Commander of the Order of the British Empire. He had cooked for numerous prominent figures such as Her Late Majesty the Queen Elizabeth II and her late husband Prince Philip, as well as former Prime Ministers of the United Kingdom Tony Blair and Margaret Thatcher. Stein's TV shows like "Rick Stein's Seafood Odyssey" and "Rick Stein's India" showcased his culinary adventures and exploration of global cuisines while his cookbooks, such as "Rick Stein's Seafood" and "Rick Stein's India," are bestsellers. Known for his warm personality and expertise, Rick Stein has left a lasting impact on the culinary world, inspiring countless food enthusiasts.

Grilled Sardines with Dressing

Rick Stein ’s Grilled Sardines with Tomato, Garlic & Thyme

Ingredients:

  • 12 sardines, cleaned
  • 1 tbsp olive oil

For  the dressing:

  • Juice and zest of half a lemon
  • 2 tbsp extra virgin olive oil
  • ½ large garlic clove, grated
  • Pinch of chilli flakes
  • 1 medium tomato, skinned and diced
  • 1 small shallot, finely chopped
  • 1 thyme sprig, leaves chopped
  • 1 tsp flatleaf parsley, chopped
  • Salt and black pepper

Method: 

1. Combine the dressing ingredients in a small bowl and season with salt and pepper.

2. Brush the sardines with olive oil and sprinkle with salt.

3. Grill the sardines on a hot barbecue or grill for 2-4 minutes on each side.

4. Spoon the dressing onto the sardines and serve with a green salad.
