Earth Day is an annual international celebration honouring environmental awareness initiatives and the conservation of the Earth’s natural resources for future generations. In the United States, this day is celebrated annually on 22nd April but, for the rest of the world, it can either be celebrated on the  same day or on the day of the spring equinox.

The first Earth Day was held on 22nd April 1970 by Gaylord Nelson, a Wisconsin senator who was inspired by environmental activism throughout the 1960s. Denis Hayes, a graduate from Harvard University, helped him organise the  event to educate people on the importance on environmental conservation. The event was a success, having attracted twenty million participants across the U.S. and supported environmentally-centred legislations such as the Clean Air Act and the Endangered Species Act. Hayes went on to organise the first international Earth Day in 1990, with more then 200 million participants spread across more than 140 countries. Nowadays, the Earth Day Network brings together more than 20,000 contributors in 190 countries.

Earth cookies

Recipe: Vegan Earth Day Cookies

Time: 20 mins
Makes: 12 

Ingredients:

  • ½ cup sugar
  • ¼ cup brown sugar
  • 1 ¾ cup flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • ½ cup vegan butter
  • ¼ cup applesauce
  • 1 tsp vanilla extract
  • 2 tbsp almond milk
  • 10 drops blue food colouring
  • 6 drops green food colouring

Method: 

1. Combine the dry ingredients in a large bowl.

2. Add the butter, applesauce, vanilla, and almond milk to the mixture and stir until well combined.

3. Set aside ¼ of the cookie dough in a small bowl. Add the green food colouring and blend well.

4. Add the blue food colouring to the remaining cookie dough and blend well.

5. Cover both bowls and freeze for 5 minutes.

6. Meanwhile, grease a baking sheet and preheat the oven to 175 degrees Celsius.

7. Combine the blue and green dough to make earth-resembling cookies. Place on the baking sheet and bake for 10-12 minutes. Let cool before serving.
