Bigilla is a traditional Maltese dish that holds a special place in the hearts and palates of the Island's locals. This thick and creamy dip is primarily made from mashed fava beans, sometimes referred to as broad beans, blended with garlic, olive oil, lemon juice, and a blend of spices such as cumin and black pepper.

The fava beans used in bigilla are usually soaked overnight and then boiled until tender before being mashed and combined with the other ingredients. The result is a flavorful and hearty dip that is often enjoyed spread on crusty bread or served alongside traditional Maltese snacks and appetizers.

Bigilla is not only delicious but also offers nutritional benefits, as fava beans are a good source of protein, fibre, and various vitamins and minerals. This rustic and wholesome dish is a cherished part of Maltese culinary heritage, showcasing the island's love for simple yet flavourful creations that have stood the test of time.
