This month, we spoke to Konstantin from Bulgaria for our fifth issue of Global Cuisine.

Bulgaria, located in Southeast Europe, boasts diverse landscapes, from Black Sea beaches to mountainous terrain. Rich in history and culture, it offers ancient ruins, charming towns, and traditional cuisine, making it a captivating destination.

Konstantin described his country by mentioning the beautiful countryside it has to offer, as well as the harsh Winters endured. He interestingly explained that Bulgarian inhabitants are descendants of three ancient groups called Thracians, Slavs, and Proto-Bulgarians, all of which have contributed to the country’s varied cuisine in their unique ways. Looking back, Konstantin initially moved to Malta for the Summer to learn English and about Mediterranean cuisine but now, it has already been ten years living in Malta and eighteen months working as a Stacker at the FoodExpress in Swatar. He chose to share the Bulgarian Stewed Chicken Legs recipe with us because he thought the Maltese may like it, whilst it is also easy to make.

Traditional Bulgarian Recipe: Stewed Chicken Legs

Level: Easy

Servings: 4

Ingredients: 

  • 4 chicken legs
  • 200g carrots
  • 200g green beans
  • 200g potatoes
  • 200g onions
  • 400g polpa di pomodoro
  • 400ml chicken bouillon
  • Salt
  • Ground black pepper
  • Rosemary
  • 2 tbsp cornflour

A wide variety of quality ingredients for our recipes are available from Arkadia supermarkets in Malta and Gozo, including Arkadia FoodExpress Swatar and Arkadia Food Market Valletta.

Method:

1. Boil the chicken legs for 20 minutes.

2. Fry the onion for 2 minutes, add the polpa and continue to cook for another 5 minutes.

3. Cut all vegetables and mix into the pan, adding the chicken bouillon. Add salt, pepper, and rosemary.

4. Place all cooked ingredients onto a dish over the chicken legs and cook for about 20 minutes.
