Clams

Clams are bivalve molluscs found in both freshwater and marine environments. They have two hinged shells protecting their soft bodies and are known for their burrowing abilities. Clams feed by filtering plankton and other small particles from the water through their siphons. They play a crucial ecological role by maintaining water quality and serving as food for various animals, including humans. They are also economically significant, harvested for their meat and shells. Common species include the hard clam, soft-shell clam, and giant clam. Clams are a popular seafood delicacy, enjoyed in various culinary dishes worldwide.

Steamed Clams with Garlic and White Wine

Recipe: Steamed Clams with Garlic and White Wine

Ingredients:

  • 900g fresh clams, cleaned
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 shallot, finely chopped
  • 1 cup dry white wine
  • 1 cup chicken or vegetable broth
  • 2 tablespoons unsalted butter
  • 1 lemon, juiced
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste
  • Crusty bread for serving

Method:

1. Rinse the clams under cold water, scrubbing to remove any sand or debris. Discard any that are open and do not close when tapped.

2. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the minced garlic and chopped shallot, sautéing until fragrant and translucent, about 2-3 minutes.

3. Pour in the white wine and broth, bringing the mixture to a simmer. Allow it to cook for 3-4 minutes, letting the alcohol in the wine cook off.

4. Add the cleaned clams to the pot, covering them with a lid. Cook for 5-7 minutes, or until the clams have opened. Discard any clams that do not open.

5. Remove the pot from heat. Stir in the butter, lemon juice, and chopped parsley. Season with salt and pepper to taste.

6. Transfer the clams and the broth to a large serving bowl. Serve immediately with crusty bread to soak up the flavourful broth.
