About Delft Blue

Delft Blue cheese, also known as Delfts Blauw, is a distinctive semi-hard cheese originating from the Netherlands. Named after the city of Delft, famous for its blue pottery, this cheese is notable for its mild, creamy texture and unique blue veins, akin to those found in Blue Stilton or Gorgonzola. Made from cow's milk, Delft Blue has a slightly crumbly yet smooth consistency and offers a balanced flavour profile with a gentle sharpness. Its eye-catching marbled appearance makes it a standout on cheese boards. Delft Blue pairs beautifully with fruits, nuts, and a variety of wines, enhancing its gastronomic versatility.

Creamy Delft Blue Cheese Pasta

Recipe: Creamy Delft Blue Cheese Pasta

Ingredients:

  • 300g of your chosen pasta
  • 150g Delft Blue cheese, crumbled
  • 1 cup heavy cream
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 200g baby spinach
  • Salt and pepper, to taste
  • Fresh basil, for garnish
  • Optional: toasted walnuts for topping

Method:

1. Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain and set aside, reserving a cup of pasta water.

2. While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the garlic and onion, sautéing until the onion becomes translucent and the garlic is fragrant, for about 2-3 minutes.

3. To the skillet, add the baby spinach and cook until wilted, for about 2 minutes. Season with salt and pepper to taste.

4. Lower the heat and pour in the heavy cream, stirring gently. Add the crumbled blue cheese and stir until the cheese has mostly melted and the sauce is creamy. If the sauce is too thick, add a bit of reserved pasta water to reach your desired consistency.

5. Add the drained pasta to the skillet with the sauce. Toss everything together until the pasta is well coated with the creamy sauce. Adjust seasoning if necessary.

6. Serve the pasta hot, garnished with fresh basil and optional toasted walnuts.
