Simple Christmas Pudding

Christmas pudding holds a cherished place in holiday traditions, symbolizing warmth, togetherness, and the joy of the festive season. Its rich flavours, blending dried fruits and spices, evoke nostalgia and bring families together. The ceremonial flaming, often accompanied by a wish, adds a touch of enchantment to this iconic Christmas dessert.

This simplified Christmas pudding retains the festive flavours without the lengthy steaming process, making it a quicker and easier option for your holiday celebrations.

Time: 2 hours – 2 hours 30 minutes

Ingredients:

  • 1 cup mixed dried fruit
  • 1 cup self-raising flour
  • 1 cup fresh breadcrumbs
  • 1/2 cup brown sugar
  • 1/2 cup melted butter
  • 2 eggs, beaten
  • 1/4 cup brandy or orange juice
  • 1/2 teaspoon mixed spice
  • 1/4 teaspoon ground cinnamon
  • Butter for greasing

Method:

1. Preheat your oven to 160°C. Grease a pudding basin with butter.

2. In a large mixing bowl, combine dried fruit, self-raising flour, breadcrumbs, brown sugar, melted butter, beaten eggs, brandy or orange juice, mixed spice, and ground cinnamon. Mix until well combined.

3. Spoon the mixture into the prepared pudding basin.

4. Cover the basin with a layer of parchment paper and then foil, securing it with a string or rubber band around the rim.

5. Bake in the preheated oven for approximately 1.5 to 2 hours or until a skewer inserted into the centre comes out clean.

6. Allow the pudding to cool for a few minutes before turning it out onto a serving plate.

7. Serve warm with a drizzle of brandy or a scoop of vanilla ice cream.

For a festive touch, warm ¼ cup of brandy or dark rum, pour it over the pudding, and ignite it just before serving.
