Chicken and Vegetable Stir Fry
Serves: 4
Ingredients:
- 450g boneless, skinless chicken breast, cut into strips
- 2 cups broccoli florets
- 1 red bell pepper, sliced
- 1 carrot, sliced into thin strips
- 1/4 cup soy sauce (ensure it's nut-free)
- 2 tablespoons honey
- 2 cloves garlic, minced
- 2 tablespoons vegetable oil
- Cooked rice for serving
Method:
1. In a bowl, whisk together the soy sauce, honey, and minced garlic.
2. Heat the vegetable oil in a large pan or wok over medium-high heat.
3. Add the chicken and stir-fry until cooked through.
4. Add the vegetables and stir-fry for another 3-5 minutes until they're tender.
5. Pour the sauce over the stir-fry and cook for an additional 2 minutes.
6. Serve the stir-fry over cooked rice.
Creamy Mushroom and Spinach Pasta
Serves: 4
Ingredients:
- 225g pasta
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 225g fresh mushrooms, sliced
- 2 cups fresh baby spinach leaves
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
Method:
1. Cook the pasta according to package instructions until al dente. Drain and set aside.
2. In a large skillet, heat the butter and olive oil over medium heat.
3. Add the chopped onion and garlic. Sauté until the onion is translucent, for about 2-3 minutes.
4. Add the sliced mushrooms to the skillet and cook until they release their moisture and turn golden brown, for about 5-7 minutes.
5. Stir in the fresh spinach and cook until wilted, for about 2 minutes.
6. Pour in the heavy cream and grated Parmesan cheese. Stir to combine and let it simmer for 2-3 minutes until the sauce thickens.
7. Season the sauce with salt and black pepper to taste.
8. Add the cooked pasta to the skillet and toss to coat the pasta evenly with the creamy mushroom and spinach sauce.
9. Serve hot, garnished with fresh chopped parsley.
Chocolate Avocado Mousse
Serves: 4
Ingredients:
- 2 ripe avocados, peeled and pitted
- 1/4 cup unsweetened cocoa powder
- 1/4 cup honey or maple syrup (adjust to taste)
- 1/4 cup milk (dairy or dairy-free)
- 1 teaspoon vanilla extract
- A pinch of salt
- Optional toppings: whipped cream (dairy or dairy-free), fresh berries, or shaved chocolate
Method:
1. Place the ripe avocados, cocoa powder, honey (or maple syrup), milk, vanilla extract, and a pinch of salt into a blender or food processor.
2. Blend all the ingredients until smooth and creamy.
3. Taste the mixture and adjust the sweetness with more honey or maple syrup if desired.
4. Once you have a silky-smooth chocolate mousse, spoon it into serving dishes or glasses.
5. Chill the mousse in the refrigerator for at least 30 minutes before serving to allow it to firm up.
6. When ready to serve, add your favourite toppings like whipped cream, fresh berries, or shaved chocolate.
