Rump Steak

Rump steak, a popular cut of beef, is known for its rich flavour and tenderness. Derived from the hindquarters of the cow, the rump steak boasts a balance of marbling and lean meat. While not as tender as some cuts, it's favoured for its robust taste and versatility in cooking.

When prepared properly, rump steak can be quite tender and juicy. It's often best cooked to medium-rare or medium, allowing the meat's natural flavours to shine. Grilling, pan-searing, or broiling are common methods of preparation, enhancing the steak's caramelized exterior while maintaining succulence within.

Due to its intense flavour, rump steak pairs well with bold seasonings, marinades, or sauces. It's frequently used in stir-fries, salads, and sandwiches. Though not as high-end as some cuts, rump steak's affordability and rich taste make it a favourite choice for those seeking a hearty beefy experience.

A wide variety of quality ingredients for our recipes are available from Arkadia supermarkets in Malta and Gozo, including Arkadia FoodExpress Swatar and Arkadia Food Market Valletta.

Method:

1. In a bowl, whisk together the minced garlic, chopped rosemary, chopped thyme, olive oil, salt, and pepper to create the marinade.

2. Place the rump steaks in a resealable plastic bag and pour the marinade over them. Seal the bag and refrigerate for at least 1 hour, allowing the flavours to infuse the meat.

3. While the steaks are marinating, prepare the herb butter. In a small bowl, mix the softened butter, chopped parsley, lemon juice, and a pinch of salt. Roll the butter into a log shape using plastic wrap and refrigerate until needed.

4. Preheat a grill or a grill pan over high heat.

5. Remove the steaks from the marinade and grill for about 4-5 minutes on each side for medium-rare, adjusting the time based on your desired level of doneness.

6. Once cooked, remove the steaks from the grill and let them rest for a few minutes.

7. Slice a round of herb butter and place it on top of each steak while they are resting, allowing it to melt and enhance the flavours.

8. Serve the garlic herb-marinated rump steaks with your choice of sides, such as roasted vegetables, mashed potatoes, or a fresh salad.
