Gorgonzola Dolce Salad

Gorgonzola is a distinguished Italian cheese known for its rich, creamy texture and bold, tangy flavour. This blue-veined cheese hails from the Lombardy and Piedmont regions of Italy and has a history dating back centuries.

Made from cow's milk, Gorgonzola undergoes a unique aging process. The cheese is inoculated with Penicillium mould, which creates distinctive blue-green veins throughout its ivory or pale-yellow paste. These veins contribute to its sharp, pungent taste and give it a strong aroma.

There are two primary types of Gorgonzola: Gorgonzola Dolce (sweet) and Gorgonzola Piccante (sharp). Gorgonzola Dolce is milder, creamier, and less aged, making it approachable for those new to blue cheese. Gorgonzola Piccante, on the other hand, is more intense, crumbly, and aged for longer, appealing to those seeking a robust and complex flavour.

Gorgonzola is a versatile ingredient, perfect for salads, pasta dishes, or enjoyed on its own with wine and crusty bread. Its distinctive taste and creamy texture make it a beloved addition to the world of cheese.

Recipe: Gorgonzola and Pear Salad with Candied Walnuts

Ingredients:

  • 8 cups mixed salad greens (such as arugula and spinach)
  • 2 ripe pears, thinly sliced
  • 1/2 cup Gorgonzola Dolce cheese, crumbled
  • 1/2 cup candied walnuts (store-bought or homemade)
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • Salt and freshly ground black pepper to taste

Method:

1. Begin by making the dressing. In a small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and black pepper. Set aside.

2. In a large salad bowl, combine the mixed greens and sliced pears.

3. Drizzle half of the dressing over the greens and pears, tossing gently to coat. Add more dressing as needed to achieve your desired level of flavour.

4. Sprinkle the crumbled Gorgonzola Dolce cheese and candied walnuts over the salad.

5. Toss the salad one more time, ensuring the ingredients are well distributed.

6. Serve the Gorgonzola and Pear Salad immediately, garnishing with extra cheese and walnuts if desired.
