Recipe: Quinoa with Cilantro and Lime

Time: 25 mins

Ingredients:

  • 2 cups vegetable broth
  • 1 cup quinoa, rinsed and drained
  • 1 garlic clove, minced
  • 2 tbsp fresh lime juice
  • 1/3 cup cilantro, chopped
  • Salt and pepper

Method:

1. Combine the broth and quinoa in a large pot and bring to a boil.

2. Cover the pot, reduce heat, and cook for 15 minutes, until the quinoa is tender.

3. Remove from the heat and let it cool, covered, for 5 minutes.

4. Uncover and fluff the quinoa with a fork. Add the lime juice, garlic, and cilantro and stir.

5. Season with salt and pepper and serve warm.
