Sun-dried tomatoes are a delightful culinary treat that intensifies the natural sweetness and flavour of ripe tomatoes through a slow and careful drying process. Originating in the Mediterranean region, this preservation method dates back centuries and was employed to ensure tomatoes were available during the off-season when fresh produce was scarce.

To create sun-dried tomatoes, ripe tomatoes are sliced and then left to dry in the sun or in a dehydrator. As the moisture evaporates, the tomatoes become concentrated, resulting in a chewy texture and a rich, robust taste. The drying process also enhances the tomatoes' umami profile, making them a versatile ingredient in various dishes.

These intensely flavoured tomatoes are a popular addition to salads, pasta dishes, pizzas, and sandwiches, adding a burst of tanginess and complexity. They can also be rehydrated in warm water or oil before use, softening them and allowing them to release their flavours more readily.

Recipe: Sundried Tomato Pesto

Time: 10 mins

Ingredients:

  • 240g sundried tomatoes in oil
  • 1 cup fresh basil leaves
  • ½ cup parmesan cheese
  • ½ cup extra virgin olive oil
  • ¼ cup pine nuts
  • 3 garlic cloves
  • 1 tsp salt

Method:

1. Combine the sundried tomatoes, basil leaves, parmesan cheese, pine nuts, garlic, and salt in a food processor.

2. Add olive oil gradually while the mixture is processing.

3. Transfer to an airtight container and store in a refrigerator for up to one week.
