Tomme de Savoie Cheese

Tomme de Savoie is a French cheese made from unpasteurised cow’s milk. Produced in the Savoie region, this cheese is characterised by a semi-firm texture with a natural rind and an ivory colour. Cheeses produced in the French Alps and Switzerland are referred to as Tomme cheeses, but they are all usually named after the village in which they are produced. The taste of the cheese varies depending on whether the cows are being fed winter hay or summer grass, taking around 2-4 months to mature, but generally, its flavour is described to be nutty and earthy.

Tomme de Savoie makes for a great pairing with medium-bodied red wines like Côtes du Rhône and Chateauneuf-du-Pape. Serve with sausage, fruit and/or bread. Ideal fruit pairings include apples and pears.

Recipe: Leek and Tomme de Savoie Vol Au Vents

Ingredients: 

  • 6 small leeks
  • Olive oil
  • 2 tbsp sour cream
  • 150g diced ham
  • 145g tomme de savoie
  • Salt and ground black pepper to taste
  • 6 vol au vents puff pastries

Method: 

1. Wash, peel and chop the leeks.

2. Cut the Tomme de Savoie cheese into small pieces.

3. Place the leeks in a hot skillet with some olive oil and cook on high heat for 10 minutes.

4. Add the sour cream, diced ham, and cheese. Season with salt and pepper and cook for an additional 5-10 minutes on low heat.

5. Preheat the oven to 175 degrees Celsius.

6. Cut the top off the vol au vents and set aside. Add the filling to the pastries and cover with the tops.

7. Bake for 15 minutes.
