Recipe: Blueberry Pancakes
Serves: 4
Ingredients:
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup buttermilk
- 1 egg
- 2 tablespoons melted butter
- 1 cup fresh blueberries
- Butter or oil for cooking
- Maple syrup for serving

Method:
1. In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt.
2. In a separate bowl, whisk together the buttermilk, egg, and melted butter.
3. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
4. Gently fold in the fresh blueberries.
5. Heat a griddle or a large non-stick skillet over medium-high heat and add a small amount of butter or oil to grease the surface.
6. Pour 1/4 cup portions of the pancake batter onto the hot griddle. Cook until bubbles form on the surface and the edges start to look set, about 2-3 minutes.
7. Flip the pancakes and cook for another 2-3 minutes, or until they are golden brown and cooked through.
8. Remove the pancakes from the griddle and keep warm while you cook the remaining batter.
9. Serve the blueberry pancakes warm with maple syrup and enjoy!
