Recipe: Grilled Seabass with Lemon-Herb Butter
Ingredients:
- 4 seabass fillets, skin on
- 4 tablespoons unsalted butter, softened
- 2 cloves garlic, minced
- Zest of 1 lemon
- 2 tablespoons freshly squeezed lemon juice
- 2 tablespoons chopped fresh parsley
- 1 tablespoon chopped fresh dill
- Salt and pepper, to taste
- Olive oil, for grilling
- Lemon wedges, for serving
- Fresh parsley sprigs, for garnish

Method:
1. Preheat your grill to medium-high heat.
2. In a small bowl, combine the softened butter, minced garlic, lemon zest, lemon juice, chopped parsley, and chopped dill. Mix well until everything is evenly incorporated. Season with salt and pepper to taste.
3. Pat the fillets dry with paper towels and season both sides of the fillets with salt and pepper.
4. Brush the grill grates with olive oil to prevent sticking. Place the fillets skin side down on the grill.
5. Grill the seabass for about 4-5 minutes on each side, or until the flesh is opaque and easily flakes with a fork. Cooking time may vary depending on the thickness of the fillets.
6. While the seabass is grilling, spoon some of the lemon-herb butter mixture over the fillets.
7. Once the seabass is cooked through, remove it from the grill and transfer to a serving platter.
8. Spoon the remaining lemon-herb butter over the grilled seabass fillets. Garnish with fresh parsley sprigs and serve immediately with lemon wedges on the side.
