Cheese and Onion Tart

Recipe: Cheese and Caramelised Onion Tart

Ingredients:

  • 1 sheet of puff pastry, thawed
  • 2 large onions, thinly sliced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 teaspoon sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup Yellow Meadow cheese, grated
  • 2 tablespoons fresh thyme leaves
  • 1 egg, beaten (for egg wash)

Method:

1. Preheat the oven to 200°C. Line a baking sheet with parchment paper.

2. In a large skillet, heat the butter and olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, until they are soft and caramelized, about 20-25 minutes.

3. Stir in the sugar, salt, and black pepper, and continue cooking for another 5 minutes until the onions are golden brown and caramelized. Remove from heat and let cool slightly.

4. Roll out the puff pastry sheet on a lightly floured surface into a rectangle about 1/4 inch thick. Transfer the pastry to the prepared baking sheet.

5. Spread the caramelized onions evenly over the puff pastry, leaving a border around the edges.

6. Sprinkle the grated Yellow Meadow cheese over the caramelized onions, then sprinkle with fresh thyme leaves.

7. Fold the edges of the puff pastry over the filling to create a rustic tart.

8. Brush the edges of the pastry with the beaten egg to create a golden crust.

9. Bake the tart in the preheated oven for 20-25 minutes, or until the pastry is golden brown and crispy.

10. Remove from the oven and let cool for a few minutes before slicing.
