Strawberry Parfait

Recipe: Strawberry Shortcake Parfait

Ingredients:

  • 2 cups fresh strawberries, hulled and sliced
  • 2 tablespoons granulated sugar
  • 1 teaspoon lemon juice
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 4 shortcake biscuits, crumbled
  • Fresh mint leaves for garnish (optional)

Method:

1. In a mixing bowl, combine the sliced strawberries with granulated sugar and lemon juice. Stir gently to coat them evenly, then set aside to macerate for about 15-20 minutes.

2. In a separate mixing bowl, whip the heavy cream until it begins to thicken. Add the powdered sugar and vanilla extract, then continue to whip until stiff peaks form.

3. To assemble the parfaits, layer the crumbled shortcake biscuits, macerated strawberries, and whipped cream in serving glasses or jars. Repeat the layers until the glasses are filled, ending with a layer of whipped cream on top.

4. Garnish each parfait with a fresh mint leaf, if desired.

5. Serve immediately or refrigerate for up to 1 hour before serving to allow the flavours to meld together.
