Seafood Paella

The rice, cooked in a flavourful broth, absorbs the essence of the ocean and bell peppers and tomatoes add bursts of colour. This one-pot wonder transforms any meal into a Spanish feast, showcasing the vibrant cuisine.

Ingredients:

  • 450g mixed seafood
  • 1 cup Arborio rice
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 tomato, diced
  • 1/2 cup frozen peas
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon saffron threads (optional)
  • 4 cups chicken or seafood broth
  • 1/4 cup dry white wine (optional)
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Method:

1. In a large, shallow pan or paella pan, heat olive oil over medium heat.

2. Add chopped onion and cook until softened. Add minced garlic and cook until fragrant.

3. Stir in diced red bell pepper and cook for a few minutes until softened.

4. Add Arborio rice, stirring to coat the rice with the oil and vegetables.

5. Sprinkle smoked paprika and saffron threads over the rice. Stir to combine.

6. Pour in the dry white wine (if using) and let it cook for a minute.

7. Add diced tomato and frozen peas to the pan. Mix well.

8. Pour in the chicken or seafood broth. Season with salt and black pepper. Bring to a simmer.

9. Place the mixed seafood evenly over the rice.

10. Cover the pan and simmer for about 20 minutes or until the rice is cooked and the seafood is done. Ensure the liquid is absorbed.

11. Garnish with fresh parsley before serving.
