Recipe: Tomato and Olive Gouda Stuffed Chicken Breast
Serves: 4
Ingredients:
- 4 boneless, skinless chicken breasts
- 1 cup tomato and olive Gouda cheese, shredded
- 1 cup cherry tomatoes, halved
- 1/2 cup Kalamata olives, sliced
- 2 cloves garlic, minced
- 2 tablespoons fresh basil, chopped
- Salt and pepper to taste
- 2 tablespoons olive oil
Method:
1. Preheat the oven to 190°C.
2. In a bowl, mix the shredded tomato and olive Gouda, cherry tomatoes, olives, minced garlic, and fresh basil.
3. Make a pocket in each chicken breast by slicing horizontally, being careful not to cut through.
4. Stuff each chicken breast with the cheese mixture, then secure with toothpicks.
5. Season the stuffed chicken breasts with salt and pepper.
6. In an oven-safe skillet, heat olive oil over medium-high heat.
7. Sear the stuffed chicken breasts on both sides until golden brown.
8. Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the chicken is cooked through.
9. Remove toothpicks before serving. Garnish with additional fresh basil if desired.
