After School Spaghetti Omelette
Looking back on our childhood memories, the spaghetti omelette often prepared by our parents or grand parents after school definitely features as one of the top four memories. If you were a picky eater, this might have been one of your favourite recipes too, thanks to its simplicity and subtle flavour. The adults most probably loved it too, as it pleased the children without the burden of long cooking times or a huge washing up pile afterwards. It provided just enough sustenance and nutrition to recharge the children after a day of school, before kicking off their home work.

Ingredients:
- 150g spaghetti
- 1 egg
- 45g grated cheese
- Cooking oil
- Salt and pepper

Method:
1. Boil some water in a large pot and cook the vermicelli pasta for a couple of minutes less than instructed, leaving it a bit al dente.
2. Meanwhile, beat the egg in a bowl and add the grated cheese. Season with salt and pepper.
3. Add the strained pasta to the egg mixture and stir to combine.
4. Heat some cooking oil in a small-medium frying pan on medium heat. Add the pasta and spread to cover the surface of the frying pan. Cook until golden on both sides.
