  • 1kg meaty beef stock bones
  • 5-6 onions, sliced
  • 5 garlic pods, minced
  • ½ tsp turmeric powder
  • ½ tbsp cumin powder
  • 2 tbsp coriander powder
  • ½ tsp crushed peppercorns
  • ½ tsp whole peppercorns
  • 1 tbsp honey
  • 4 bay leaves
  • 3 carrots, sliced
  • 3 potatoes, sliced
  • Salt
  • 5 cups of water

A wide variety of quality ingredients for our recipes are available from Arkadia supermarkets in Malta and Gozo, including Arkadia FoodExpress Swatar and Arkadia Food Market Valletta.

Method:

1. Wash the bones and strain from any excess water.

2. Heat a large pot on medium heat and add the olive oil. Add the onions and garlic.

3. Once the onions start to caramelise, add the bones and season with salt. Braise the onions and bones together for 10-15 minutes. Do not let the onions burn.

4. Add the turmeric, cumin, coriander, bay leaves, and peppercorns and stir.

5. Add the honey, stir, and continue to braise for 5 minutes.

6. Add the potatoes and carrots and cook for another 5 minutes, combining all ingredients together.

7. Pour in the water and season with more salt. Make sure you have enough water to cover all ingredients. Gently simmer, covered, for 3-4 hours. Remove any excess fat that gathers at the surface.

8. Serve warm.
