World Chocolate Day

This could potentially be our new favourite day of the year! 7th July was chosen to commemorate World Chocolate Day because it was the day on which chocolate was first introduced to Europe in 1550. On World Chocolate Day, go ahead and indulge in some tasty chocolate treats without the guilt. This day celebrates anything made from or covered in chocolate so, in the spirit of celebration, you have quite a few options to choose from. There are also various kinds of chocolate, the most common being milk, dark and white chocolate, but we love them all. Chocolate is known to boost serotonin and dopamine levels for a better mood and dark chocolate even has some health benefits. All the more reasons to celebrate chocolate!
Recipe: Triple Chocolate Chip Cookies
Time: 35 mins + chilling
Makes: 14 cookies
Ingredients:
- 200g unsalted butter, softened
- 200g soft light brown sugar
- 175g plain flour
- 50g cocoa powder
- 1 tsp baking powder
- 50g dark chocolate, chopped
- 50g milk chocolate, chopped
- 50g white chocolate, chopped
- Fine sea salt

Method:
1. Add the butter and sugar to a large bowl and whip together until light and fluffy.
2. Add the flour, cocoa, baking powder, and half a teaspoon of fine sea salt. Mix until smooth.
3. Add all the chocolate and mix until combined. Use an ice cream scoop to make 14 balls and place them onto 2-3 baking trays lined with baking paper. Chill in the fridge for 15 minutes.
4. Meanwhile, preheat the oven to 180 degrees Celsius, or 160 degrees Celsius if fan assisted. Place the trays in the oven and bake for 16-18 minutes until browned and crispy on the edges, but still a little soft in the middle. Cool completely before serving.
