Ingredients:

  • 300g olives, pitted
  • 1 garlic clove, grated
  • 2 tbsp capers
  • 3 tbsp olive oil + extra for garnish
  • 2 tbsp lemon juice
  • Quarter of a lemon zest
  • 1 tsp dried oregano, rosemary, or thyme
  • Black pepper, for seasoning
  • Chopped parsley, for garnish

Method:

1. Place all ingredients, except for the garnish, into a food processor and pulse until the mixture achieves the desired consistency.
