Barbecue quesadillas combine the best of both worlds - the smoky goodness of barbecue and the cheesy delight of quesadillas. These flavour-packed treats are a hit at any gathering. Filled with crisp shrimp and sweet peppers, they boast a rich, savoury taste. The melted cheese binds everything together, while the tortilla turns perfectly crispy. For a burst of freshness, add diced tomatoes, onions, and cilantro. To spice things up, serve with sour cream on the side. Whether as appetizers or a main course, barbecue quesadillas guarantee a mouth-watering experience that will leave your guests asking for seconds and the recipe.

Ingredients:

  • ½ cup salsa, divided
  • 4 (10-inch) flour tortillas
  • ¼ cup chopped sweet onion
  • ¼ cup chopped green bell pepper
  • ¼ cup chopped red bell pepper
  • ¼ cup chopped tomato
  • 2 tbsp chopped fresh cilantro
  • 2 tbsp chopped fresh chives
  • ¼ cup sliced black olives
  • 1 cup cooked and peeled shrimp
  • ½ cup shredded cheddar cheese
  • ¼ cup sour cream

Method:

1. Preheat the grill on low heat.

2. Spread 1 tablespoon of salsa on half of each tortilla.

3. Distribute the onion, green and red bell peppers, tomato, cilantro, chives, olives, and shrimp evenly among the tortillas.

4. Sprinkle each tortilla with cheese and fold in half to cover the filling.

5. Lightly oil the grill grate and place the tortillas directly on the grill. Cook for about 2 minutes on each side, until the cheese is melted.

6. Serve with the remaining salsa and sour cream.
