Grilled sausage with peppers and onions is a savoury and satisfying dish that exudes comfort and flavour. The smoky aroma of grilled sausages perfectly complements the sweet and tangy taste of caramelized onions and vibrant bell peppers. This colourful medley of ingredients creates a harmonious balance of textures and tastes. Ingredients: 

  • 6 sausages
  • 6 hot dog buns
  • 1 large onion, sliced
  • 2 tablespoons olive oil
  • 450g roasted red peppers
  • Salt and pepper

Method: 

1. Preheat grill to medium heat.

2. Reduce one side to medium-low heat.

3. Place a cast iron pan with the olive oil and onions in it on the medium-low side of the grill. Cook for 15-20 minutes, stirring from time to time, until the onions start to golden.

4. About 5 minutes before the onions are ready, add the roasted red peppers to the pan. Continue to cook and stir until they start to cook around the edges. Toss with a dash of salt and pepper.

5. Remove the onions and peppers from the grill and transfer to a plate lined with paper towels to drain off excess oil.

6. Place the sausages on the grill. Grill each side for 2-3 minutes. Remove from the grill and turn it off.

7. Place each sausage on each bun (you can lightly toast the buns if you like) and top with the caramelized onion and roasted red pepper mixture to serve.
