A Slice of Red Velvet Cake

February is Valentine’s season, but love is not only for couples, it is for family, dear friends, and self-love too! We should take good care of our loved ones all year round but, if you’re looking for that extra special treat this Valentine’s Day, try out this simple Red Velvet Cake recipe. Food is the best love language, for us at least.

Recipe: Red Velvet Cake

Ingredients:

For the cake:

• 2 2/3 cups cake flour

• 2 tbsp cocoa powder

• 1 tsp baking soda

• ¼ tsp salt

• ½ cup unsalted butter, softened

• 1 cup vegetable oil

• 1 ¾ cups white sugar

• 2 tsp vanilla extract

• 3 large eggs

• 2 ½ tbsp red food colouring

• 1 cup buttermilk

• 2 tsp white vinegar

For the cream cheese frosting:

• 1 cup cream cheese, softened

• ½ cup unsalted butter, softened

• 1 tsp vanilla extract

• ¼ tsp salt

• 3 cups powdered sugar, sifted

• 1-2 tbsp cream

Method:

For the cake:

1. Preheat the oven to 350F degrees. Grease and lightly flour a 9x13 inch baking pan.

2. Sift together the flour, cocoa, baking soda and salt. Whisk gently to combine.

3. In a separate large bowl, beat together the butter and sugar until fluffy. Beat in the oil, followed by the eggs, vanilla extract, and red food colouring.

4. Beat the flour mixture into the butter mixture, adding about 1/3 at a time, alternating with 1/3 of the buttermilk. Beat in the vinegar.

5. Pour the batter into the pan and bake for 30-35 minutes, until an inserted toothpick comes out clean.

For the frosting:

1. Beat the butter in a large bowl until soft.

2. Beat in the cream cheese. Add in the vanilla extract and salt.

3. Mix in the powdered sugar, about 1 cup at a time. If the frosting seems too thick, mix in some cream, 1 tbsp at a time.

4. Frost the cooled cake and decorate as desired.
