Cheese Cachapas from Venezuela

For Briggitt, growing up in Venezuela was blissful and very fun. She describes her home village as being lively and noisy where there is always something to do. Throughout history, Venezuela was impacted by many different cultures, each contributing to the lively traditions it still celebrates to this day. For example, the traditional dance is ‘Joropo’, a blend of flamenco and Arabian dance styles. The main source of food is corn, and it is used in most of its local dishes. Briggitt moved to Malta with her husband to look for new opportunities and is enjoying working closely with her colleagues and customers at Arkadia Foodstore in Gozo. She chose to share the Cachapas recipe from Venezuela with us because it reminds her of sweet moments with her grandmother and it’s the meal from home she misses most!

The Traditional Venezuelan Recipe for Cheese Cachapas

Servings: 6 medium-sized cachapas

Ingredients:
 • 300g sweet corn 
 • 2 eggs
 • 2 tbsp of corn flour
 • 1 tbsp sugar 
 • Pinch of salt
 • 1 tbsp butter 
 • Cheese for filling

Method:
1. Place the corn, eggs, corn flour, sugar and salt in a mixing bowl and blend together until smooth.
2. Pour one serving onto a greased pan and cook both sides until golden.
3. Remove from the pan and fill one side of the cachapa with cheese.
4. Fold the cachapa in half and spread some butter on it to serve.
5. Repeat for more servings until all the mixture is used up.
