One Pot Gnocchi Pesto 

Indulge in the simplicity and richness of One-Pot Gnocchi Pesto, a culinary delight in a single pan. After cooking the gnocchi, start by sautéing some garlic to golden perfection. Introduce the creamy pesto, coating the potato pillows in a basil-infused flavour. Add some spinach leaves for freshness, and some Parmesan to contribute to a luxurious creaminess that ties the elements together. This one-pot recipe is a real time-saver, effortlessly serving four.

Ingredients:

  • 1 package (450g) potato gnocchi
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/3 cup pesto sauce
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • Spinach leaves for garnish (optional)

Method:

1. In a large pot, bring some salted water to a boil. Cook the gnocchi according to the package instructions. Drain and set aside.

2. In the same pot, heat some olive oil over medium heat. Add the minced garlic and sauté until fragrant.

3. Return the cooked gnocchi to the pot.

4. Stir in the pesto sauce, ensuring the gnocchi are well coated.

5. Add grated Parmesan cheese and stir until melted. Season with salt and black pepper to taste.

6. Cook for an additional 2-3 minutes until everything is heated through.

7. Serve hot, garnished with spinach leaves if desired.
