Maltese Sausage and Mushroom Pasta

Maltese sausage, known as "Zalzett Malti," is a culinary gem that reflects the vibrant and diverse food culture of the Maltese Islands in the Mediterranean. This sausage is an integral part of Maltese cuisine, celebrated for its unique blend of flavours and rich history.

Made from a mixture of pork, spices, and herbs, Maltese sausage boasts a distinct taste profile that sets it apart. The key ingredient that gives it its distinctive flavour is coriander seeds, which infuse the sausage with a subtle citrusy and earthy note. Other spices, such as pepper and paprika, contribute to its robust taste.

Maltese sausage is traditionally handmade, with each butcher often having their closely guarded family recipe. It is typically air-dried and aged, allowing the flavours to deepen and intensify over time.

This sausage is incredibly versatile and finds its way into various Maltese dishes, from hearty stews to pasta sauces. Recipe: Maltese Sausage and Mushroom Pasta

Serves: 4

Ingredients:

  • 340g penne pasta
  • 4 Maltese sausages, casings removed and crumbled
  • 225g mushrooms, sliced
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (400g) diced tomatoes
  • 1/2 cup heavy cream
  • 1/2 cup chicken or vegetable broth
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste
  • Grated Parmesan cheese for garnish (optional)
  • Fresh basil leaves for garnish (optional)

Method:

1. Cook the penne pasta according to the package instructions until al dente. Drain and set aside.

2. In a large skillet, cook the crumbled Maltese sausages over medium heat until browned and cooked through, breaking them apart as they cook. Remove them from the skillet and set aside.

3. In the same skillet, add a little oil if needed, then add the chopped onion and sliced mushrooms. Sauté until they're softened, and the mushrooms have released their moisture.

4. Stir in the minced garlic and cook for an additional minute until fragrant.

5. Return the cooked Maltese sausage to the skillet. Add the diced tomatoes (with their juices), dried oregano, heavy cream, and chicken or vegetable broth. Stir well and simmer for about 5 minutes until the sauce thickens slightly. Season with salt and black pepper to taste.

6. Add the cooked penne pasta to the skillet and toss to coat the pasta with the sauce.

7. Serve the pasta hot, garnished with grated Parmesan cheese and fresh basil leaves if desired. This flavourful dish serves four and is a celebration of Maltese sausage in a delicious pasta creation. Enjoy!
