Boneless Chicken Thighs

Recipe: Lemon Garlic Butter Chicken Thighs

Serves: 4

Ingredients:

  • 4 boneless chicken thighs
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/4 cup chicken broth
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 2 tablespoons unsalted butter
  • 1 teaspoon dried thyme
  • Salt and black pepper, to taste
  • Fresh parsley, for garnish

Method:

1. Season the boneless chicken thighs generously with salt and black pepper.

2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken thighs and sear them for about 4-5 minutes on each side until they turn golden brown and cooked through. Remove them from the skillet and set them aside on a plate.

3. In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.

4. Deglaze the skillet with chicken broth, scraping up any browned bits from the bottom. Add lemon juice, lemon zest, and dried thyme. Stir to combine.

5. Reduce the heat to low, add butter, and let it melt into the sauce, stirring until well incorporated.

6. Return the cooked chicken thighs to the skillet and simmer in the sauce for an additional 2-3 minutes to heat through.

7. Serve the Lemon Garlic Butter Chicken Thighs hot, garnished with fresh parsley. You can also drizzle some of the flavourful sauce over the chicken for added richness.
