Recipe: Cherry Tomato and Basil Pasta
Serves: 4
Ingredients:
- 340g of pasta
- 2 cups cherry tomatoes, halved
- 3 cloves garlic, minced
- 1/4 cup fresh basil leaves, thinly sliced
- 1/4 cup extra-virgin olive oil
- Salt and black pepper to taste
- 1/4 teaspoon red pepper flakes (optional, for a little heat)
- Grated Parmesan cheese for garnish (optional)

Method:
1. Cook the pasta according to the package instructions until al dente. Drain and set aside.
2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes (if using) and sauté for about 1-2 minutes until fragrant.
3. Add the cherry tomatoes to the skillet and cook for 3-4 minutes, or until they start to soften and release their juices. Season with salt and black pepper to taste.
4. Stir in half of the sliced basil leaves and cook for an additional 1-2 minutes.
5. Add the cooked pasta to the skillet and toss everything together until well combined. If the pasta seems dry, you can drizzle a bit more olive oil.
6. Serve the Cherry Tomato and Basil Pasta in individual plates or bowls. Garnish with the remaining basil leaves and grated Parmesan cheese if desired.
