Romanesco, an intriguing vegetable, captivates with its mesmerizing fractal pattern of its florets. Resembling a lime-green cauliflower, it is part of the Brassica family, offering a unique hybrid flavour between broccoli and cauliflower. Its mild, nutty taste and tender texture make it a versatile ingredient for various dishes. Roasted with olive oil, garlic, and spices, it becomes a delightful side. Steamed and drizzled with lemon, it retains its vibrant colour and crunch.

Romanesco can be cooked in a variety of ways as broccoli or cauliflower would be cooked, like in a stir-fry, with pasta or in a soup. It can be either be eaten raw or cooked, and its stems, leaves and stalks are all edible. Romanesco's striking appearance also adds an artistic touch to salads or veggie platters. This fascinating vegetable continues to enchant food enthusiasts, blending aesthetics with delightful flavours.

Recipe: Roasted Parmesan Romanesco

Time: 35 mins
Servings: 4

Ingredients:

  • 2 small Romanesco heads
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • Salt and pepper
  • ¼ tsp red pepper flakes
  • ½ cup grated Parmesan cheese
  • ½ cup panko breadcrumbs

Method:

1. Preheat the oven to 200 degrees Celsius.

2. Cut the Romanesco into small chunks of florets and place in a bowl.

3. Add the olive oil and toss.

4. Add the garlic, red pepper flakes, Parmesan, breadcrumbs and some salt and pepper and toss.

5. Spread out on a baking sheet and roast for 15 minutes. Then, stir and roast for another 15-20 minutes.
