Artichokes in Oil

If their delicious taste is not a good enough excuse to indulge in these artichokes in oil, one should know they contain various nutrients too. Add them to your salad, pizza, pasta, or antipasti for that well-appreciated boost in flavour.

Here are some fun facts:

  • Artichokes are one of the oldest forms of food known to humans.
  • Artichokes are actually flowers from the sunflower family that haven’t bloomed.

Recipe: Artichoke Pasta

Time: 40 mins
Servings: 4

Ingredients:

  • 227g pasta
  • ½ cup pasta water
  • 1 tbsp olive oil
  • 2 garlic cloves, minced
  • ¾ cup white wine
  • 1/3 cup chicken stock
  • 2 tsp lemon juice
  • 340g marinated artichoke hearts, drained and chopped
  • ¾ cup heavy cream
  • ¼ cup shredded parmesan cheese + extra for garnish
  • 1 tsp corn starch
  • 1 cup fresh spinach
  • Salt and pepper

Method:

1. Cook the pasta in salted water according to the package instructions and drain. Reserve ½ cup of pasta water.

2. Meanwhile, heat the olive oil in a in a skillet over medium heat and add the garlic. Cook for half a minute.

3. Add the wine, chicken stock, and lemon juice, and simmer for 5 minutes.

4. Stir in the artichokes, heavy cream and parmesan cheese, and simmer for 3-5 minutes until slightly thickened.

5. Combine the corn starch with 2 teaspoons of cold water and add to the skillet. Simmer for another minute.

6. Add the cooked pasta, spinach, and 2 tablespoons of pasta water. Mix well, adding more pasta water if needed. Season with salt and pepper to taste.

7. Sprinkle with more parmesan cheese and serve.
