Cream and Jam Doughnut Treats

Back when we were children, if your school was near a bakery, chances were you had quite a few of these cream and jam doughnuts treated to you after school. It was like a reward for a hard day's work, giving us just the energy we needed to start our home work and after school activities. The sweet and savoury blend was just delightful, and we all had to resist the temptation to just lick off all the cream at one go! 

Cream and Jam Doughnut

Servings: 6

Ingredients:

  • 250g all-purpose flour
  • ¼ cup caster sugar
  • 1 egg yolk, beaten
  • ¼ tsp salt
  • ½ cup whole milk
  • 1 tsp yeast
  • 50g unsalted butter
  • Whipped cream, for filling
  • Jam, for filling
  • Icing sugar, for topping
  • Cooking oil

Method:

1. Add the milk and butter to a saucepan on low heat. Once the butter has melted, set aside to cool.

2. Add the flour, yeast, sugar, and salt to a mixing bowl and stir to combine.

3. Add the beaten egg yolk to the mixing bowl.

4. Mix on low speed, gradually adding the milk and melted butter to the mixture.

5. Once all ingredients are combined, increase to medium-high speed, and continue mixing to form a dough.

6. Knead the dough on a lightly floured surface.

7. Grease a bowl with some oil. Place the dough into the bowl and cover with cling film and a tea towel for 2 hours.

8. Roll out the dough onto a lightly floured surface, to form a rectangular shape about 1cm thick.

9. Cut the dough into 6 rectangles and place on a tray lined with baking paper. Once again, cover with cling film and a tea towel for 1 hour.

10. Meanwhile, fill a deep frying pan halfway on medium-low heat until the temperature reaches 180 degrees Celsius. If you are using a deep fryer, set the temperature to 175 degrees Celsius and switch it on some time before the hour is up.

11. Fry each portion in the oil until golden brown.

12. Drain the donuts and let them cool before cutting them down the middle and filling them with whipped cream and jam. Sprinkle with icing sugar and serve.
