Kiwi and Strawberry Fruit Salad

Kiwi, often referred to as the "kiwifruit," is a small, fuzzy, and nutrient-packed fruit that has gained worldwide popularity. Native to China, it was originally known as the Chinese gooseberry. However, it wasn't until it was introduced to New Zealand in the early 20th century that it gained its current name, paying homage to the country's native kiwi bird.

Kiwi is renowned for its vibrant green flesh speckled with tiny, edible black seeds. It's a nutritional powerhouse, packed with vitamin C, vitamin K, vitamin E, potassium, and dietary fibre. This combination of nutrients makes it an excellent choice for supporting the immune system, aiding digestion, and promoting heart health. Recipe: Kiwi and Strawberry Fruit Salad

Serves: 4

Ingredients:

  • 4 kiwifruits, peeled and sliced into rounds
  • 1 cup fresh strawberries, hulled and sliced
  • 1 small orange, peeled and segmented
  • 1 tablespoon honey
  • 1 tablespoon fresh lime juice
  • 1 teaspoon fresh mint leaves, chopped (optional for garnish)

Method:

1. Wash and peel the kiwifruits, then slice them into rounds. Hull and slice the strawberries. Peel the orange and separate the segments. Place all the prepared fruit in a large mixing bowl.

2. To make the dressing, combine the honey and fresh lime juice in a small bowl. Whisk them together until well blended.

3. Drizzle the honey-lime dressing over the fruit in the mixing bowl. Gently toss the fruit to ensure it is evenly coated with the dressing.

4. Cover the bowl with plastic wrap or a lid and refrigerate the fruit salad for about 30 minutes to allow the flavours to meld and the salad to chill.

5. When ready to serve, garnish the fruit salad with chopped fresh mint leaves if desired. Divide the fruit salad among four serving bowls or plates.
