Method:

1. Pat the meagre fillets dry with paper towels. Season both sides with salt and pepper.

2. Lightly coat each fillet with flour, shaking off any excess.

3. Heat the olive oil in a large skillet over medium-high heat. Once hot, add the meagre fillets and cook for about 3-4 minutes per side, or until they are golden brown and easily flake with a fork. Remove the fillets from the skillet and set them aside.

4. In the same skillet, add the butter and minced garlic. Sauté for about a minute until fragrant.

5. Stir in the capers and lemon juice, scraping up any browned bits from the bottom of the skillet. Cook for an additional 2 minutes to thicken the sauce slightly.

6. Return the meagre fillets to the skillet and spoon the sauce over them. Cook for an additional 2 minutes to heat the fillets through.

7. Garnish with fresh parsley and lemon wedges.

8. Serve the Meagre Fillet with Lemon Caper Butter Sauce immediately, accompanied by your choice of side dishes like steamed vegetables or roasted potatoes. Enjoy this elegant and flavourful seafood dish for four!
