Seedless Grapes

Recipe: Grape Crostini

Time: 40 mins
Makes: 24

Ingredients:

  • 3 cups grapes, seedless, halved lengthwise
  • 2 tbsp rice vinegar
  • 2 tbsp olive oil
  • Salt and pepper
  • 1 tsp grated orange zest
  • 24 slices of a French baguette
  • ½ cup shaved Manchego or Romano cheese
  • Fresh basil leaves, sliced

Method:

1. Preheat the oven to 200 degrees Celsius.

2. Toss the grapes, rice vinegar, olive oil, salt, and pepper in a greased pan. Roast for 30-35 minutes and stir in the orange zest.

3. Preheat the broiler.

4. Arrange the baguette slices on an ungreased baking sheet and broil for 1-2 minutes on each side, until lightly browned.

5. Top with the warm grape mixture, shaved cheese and basil leaves.
